I've only recenlty discovered the trick!
Breakfast is not my favourite meal to cook so it would often be Marek (my guy) making our weekend breakfasts, which will always consist of the best scrambled eggs I've ever eaten!
"How do you do it??" I would constantly ask him. The reply would only be a cheeky grin, aka "that's for me to know, and for you to NEVER find out so that you worship me for my egg making skills forever!".
Which is exactly why Marek was so saddened when I finally discovered the trick myself. Heh heh!
It's so simple, I really don't know why I didn't think of it before.
HERE'S HOW.......
Eggs whisked with a couple dollops of milk, a decent sprinkle of salt and little sprinkle of black pepper. And now for the main trick....cook in a pan on low heat and remove from heat just before they are ready and let sit for about 30 seconds before quickly transfering to the plate (they will keep cooking in the pan so if you leave them in the hot pan they will stiffen and get too dry)
For this breakfast Marek toasted some english muffins, topped with scrambled egg, cooked chopped up frankfurter and some emmental cheese. He then placed them under the grill for a short time just to melt the cheese.
This was so simple and sooooo good!
